I used to work close to Lucky Plaza, where there was a Filipino food court offering a dish similar in taste to the local Bobo Cha Cha. However, this version included banana and lychee.

Mama Bear combined the 2 dishes with her own favourite toppings.


Yield: Party size that caters to 10 pax

Total Cook Time: 1hr mins


Ingredients

  • Coconut milk 200ml x 2

  • coconut cream 200ml x 2

  • Evaporated milk 390ml x 2

  • Jackfruit 1 pkt

  • Papaya (Optional)

  • Bur bur jelly 1 pkt

  • Glutinous rice balls x 1 pkt

  • Sweet potatoes 500g

  • Yam 250g

  • Sago (exclude)

  • Pandan leaves

  • Banana x 4

  • Rock sugar

  • 1 litre water to 1 pkt 12g agar agar powder


Instructions

  1. Boil: bur bur jelly and drain over cold water

  2. Cube: Yam + Sweet potatoes

  3. Shred: Jackfruit

  4. Cook

    • Cook 6L of water?

    • Add pandan leaves till fragrant

  5. COOKING TIPS

    • Do not boil the pandan leaves for too long or it will turn a little bitter

    • I did not add papaya as some papaya causes a bitter taste to soup

    • Remove pandan leaves

    • Add Coconut milk and coconut cream

  6. Add in sequence:

    • Yam + Sweet potato

    • Jackfruit

    • Glutinous Rice balls

    • Banana

    • Evaporated milk

    • Add rock sugar to taste
