Eurasian Potato Salad (Overnight Prep)

This recipe was create after recovering from AML. I was at home using up my 6 months critical illness leave. The church that i was attending at that time, wanted to raise funds for a church building.

They asked for members to contribute unique recipes in a cookbook, this cookbook will be sold to help contribute to the building fund. This recipe was selected among many entries. Pictures were taken by the church cookbook committee.


Ingredients

  • 2 portions

  • 2 kg potatoes

  • 1 sausage roll, small cubes

  • 2 pkt Bonito flakes

  • 1 packet approximately 250mg small prawns, cut into small pieces

  • 1 stalk Spring onion

  • 1 Sour cream

  • 280 ml Mayo

Instructions

  1. Prep

    1. Chop: spring onion (Set aside some for garnish)

    2. Boil: Potato, and peel, cube

  2. Mix

    1. Sour cream + mayo all other ingredients

  3. Cook

    1. Sausage roll and prawns, stir-fry till crispy

  4. Finishing touches

    a. Mix in Sour Cream mix and Prawn. Do not waste the oils from the prawn and sausage rolls

    b. Top with bonito flakes, Stir-fried Sausage-Prawn and Spring Onion garnish

  5. Lastly the key part of this slad is keeping in the frige overnight. As this step helps gel up the sauces into the potatoes

I have friends whose kids dislike veggies, and they say their kids will devour this salad.
