Home-made Umeshu (Plum Wine)

Description

One of my favorite alcoholic beverages is Choya. Here's how I made my own Choya.


Yield: Makes 2-3L

Total Cook Time: 6 Months


Ingredients

  • 1st you need to invest in a glass 5L Jar that can be closed air tight

  • 900g Ume plum fruits (no moldy ones)

  • 500 to 800 g honey Rock sugar

  • *1 You can adjust the amount of rock sugar between 500-800g depends on how sweet the plum wine will be.

  • 2 L Flavoured Wine + Pineapple soju

*2 Choose liquor that has above 35% alcohol content such as vodka, rum, gin


Instructions

  1. Soak plum fruits in water for 3 hours.

  2. Stylise the glass jar by boiling or wipe with spirits or alcohol wipes and set aside.

  3. Wash the plum fruits thoroughly under running water.

  4. Remove excess water off the plum fruits by gently tapping the fruits.

  5. Remove the stem ends with a toothpick or a bamboo skewer.

  6. Place rock sugar and ume plum fruits alternately in layers into the glass jar.

  7. Pour the liquor of your choice into the glass jar.

  8. Put the lid on and leave it at a cool place where no direct sunlight for minimum 6 months.
