Sourdough Naan

Fascinated by the art of crafting sourdough bread and the cost of buying sourdough starters, Mama Bear chose to try making her own starter, incorporating it into a variety of tasty bread recipes. She was already knowledgeable about making Naan. This is a fusion of Naan techniques and sourdough starter.


Yield: Make 16 Breads

Total Cook Time: 50 mins


Ingredients

  • 350 g bread / all purpose flour (2+3/4 cup)

  • 180 g milk / water

  • 150 g sourdough discard (1/2 cup)

  • 100 g yoghurt

  • 20 g oil

  • 30 g sugar (4 tbs)

  • 7 g salt (2 tsp)

  • Spices:

  • Ground Cumin 1 tsp

  • Ground garlic 1 tsp

  • Butter

    • 1/2 Block butter

    • 1/2 stalk Coriander


Instructions

  1. Mix sourdough discard, water and flour to sit 30 mins

  2. Add yoghurt, salt, sugar and oil.

  3. Knead till smooth dough

  4. Proof till double 1hr

  5. Divide into equal 16 portions

  6. Flatten dough

  7. Rest 15 mins

  8. Fry over skillet no oil needed
