Sultana Rum Cake

Those were the days when I began my experimental journey with food. I created my first dish using rum, which was rum raisin cookies. That was when I learned to infuse raisins with rum. So, why not apply the same technique and turn it into a cake?


Yield: Makes 2 cakes

Total Cook Time: 1hr 15 mins


Ingredients

  • 250 g raisins ( 1 1/2 cups)

  • 1/2 cup protein flour to remaining raisins

  • 250 g butter or 1 block

  • 2/3 cup sugar

  • 4 large eggs

  • 1 tbs golden syrup

  • 1 2/3 plain flour

  • 1 tbs milk powder

  • 1 tsp baking powder

  • 1/2 flour mix at a time into egg mixture

  • Rum extract


Instructions

  • Prep

    1. Soak: Rum in 1 1/2 cup raisins Soak in warm water 15 mins

    2. Set aside 2 tbs

    3. Drain off water

    4. Mix: 250 g raisins ( 1 1/2 cups) +1/2 cup protein flour to remaining raisins

    5. Butter 2 loaf pans

  • Mix

    1. 250 g butter, beat till fluffy

    2. Add 2/3 cup sugar

    3. Beat till creamy

    4. 4 large eggs

    5. Add one egg at a time until well combined

    6. Add 1 tbs golden syrup

    7. In a separate bowl, 1 2/3 plain flour + 1 tbs milk powder + 1 tsp baking powder

    8. Add sifted 1/2 flour mix at a time into egg mixture

    9. Mix at low speed

    10. Add in raisins (with rum juice). Mix well.

    11. Put into well buttered dish

    12. Top with the 2 tbs raisins

    13. Preheat 160°c

    14. Top with more raisins

  • Cook

    1. Bake 160° 45 mins

    2. Or another 45 mins

    3. Till toothpick comes out smooth
