THAI NOODLE SALAD

I attended a friend's wedding where they served a buffet-style Thai Noodle Salad. This is one of my favorite salads, featuring a combination of sweet, tangy, and spicy flavors. The proportions need to be just right.
Yield: Party size that caters to 10 pax
Total Cook Time: 30mins
Ingredients
200 g mung bean vermicelli
100 g (3.5 ounces) uncooked large prawns – de-veined and halved length-ways (to exclude)
250 g minced/ground pork
4 tbsp lime juice (40ml)
9 tbsp fish sauce
6 tsp grated brown sugar
2 small red onion – cut in half, and sliced thinly
1 spring onion/scallion – white part diced and greens cut into 1cm pieces
1 cherry tomato – halved
1/4 cup roasted peanuts – roughly chopped (Cashew 100g)
1 tsp chilli padi
1 stalk stems coriander/cilantro stems and leaves – sliced finely
Add 1 pkt pork fat
Separate sauce, garnishes, pounded cashew nut
Noodle and minced meat goes together
Instructions
Prep
Add the mung bean vermicelli to a bowl of cold water.
Soak the vermicelli until the noodles have become soft and lost their brittleness; about 5 minutes.
Mix
Sauce: Fish sauce, palm sugar and lime juice. (Taste)
Check that the balance of flavour is to your taste and adjust accordingly if necessary.
Cook
Add oil in pan.
Add the minced/ground pork to the same pan.
Stir occasionally until the meat is cooked. It’s not necessary to completely break up the mince. In fact, it’s preferable to have some pieces. When cooked, lift it out.
Set aside.
Drain the noodles from the bowl of water.
Using the same saucepan, bring 2 cups of water to the boil and add the noodles. Cook for about 2 minutes until the noodles are soft, pliable and translucent. Drain the noodles in a colander. Rinse over cold water.
Add the prawns and mince, along with Sauce. Mix them together well.
Then add the red onion, scallion, dried chilli flakes, coriander and tomato. Mix well.
Add sauce and Mix well again.
