FISH PATTIES with AVOCADO SALAD

Inspired by the YouTube series "Rich Kids Go Skint", this collection offers quick, simple, and budget-friendly recipes featuring five main proteins: beef, pork, chicken, fish, and plant-based alternatives. This is another quick and easy recipe that has been taste-tested by my children.

Main Protein: Fish and Tempeh


Yield: 2 Servings

Total Cook Time: 45 mins Ingredients

  • Fish Fish Patties:

    • portion frozen pink salmon / cod

Note: Tried this frozen salmon belly that i bought from the local supermarket. Although it was tasty. There were alot of bones to remove. I suggest get chunkier fish that can be flaked easily

  • 1/2 pkt breadcrumbs or crushed crackers

  • 1 large egg

  • 2 tablespoons mayonnaise

  • 1 small onion, finely chopped

  • 1 teaspoon lemon zest or lemon juice

  • Seasonings (salt, black pepper, and paprika & oregano to taste)

  • Cooking spray or oil


  • Avocado salad:

    • 2 ripe avocados, cube

    Note:

    Pick dark skinned Avocadoes if you are using it immediately. If not, pick green skinned. To prevent it from spoiling and maturing nicely, put avocadoes submerged in rice. In an asian kitchen, we always have a rice bin. I placed my avocadoes into my rice bin.

    • 1 to 2 teaspoons honey

    • 1 tbs Pistachio butter / peanut butter

    • 1/2 pkt dessert cheese / laughing cow cheese

    • 1 pkt gilled tempeh / 1/2 pkt toufu

    • 2 tablespoons extra virgin olive oil

    • 1 tablespoon fresh lemon juice (reduced slightly to balance the salty cheese)

    • Salt and black pepper to taste


Instructions

  • Preheat your oven to 400°F (200°C) and lightly oil or spray a baking sheet.

  • Drain liquid from fish

  • Grill fish & tempeh / toufu 180° for 15mins

  • Mix the flaked fish, breadcrumbs, egg, mayonnaise, onion, lemon zest, and seasonings in a large bowl until well combined.

  • Shape the mixture into 4 to 6 equal round patties, pressing them gently so they hold together.

  • Place the patties in a casserole with a prepared baking sheet and lightly spray the tops with oil.

  • Bake for 15 minutes, then carefully flip the patties over.

  • Bake for another 5 to 10 minutes until golden brown and cooked through.

  • Cool for 5 minutes before serving with Avocado Salad.

  • Cut avocado in cubes

  • Crumble cheese

  • Mix all salad ingredients together
