FRITTATA with Homey Canned Soup and Leftovers

Inspired by the YouTube series "Rich Kids Go Skint", this collection offers quick, simple, and budget-friendly recipes featuring five main proteins: beef, pork, chicken, fish, and plant-based alternatives. This is another quick and easy recipe that has been taste-tested by my children.

Main Protein: Pork.


Yield: 2 Servings

Total Cook Time: 45 mins


Ingredients

  • 2 large eggs

  • 1/4 cup milk

  • Seasoning: Salt and pepper

  • Cooking oil

  • 2 yellow onion (Diced)

  • 1 stalk Broccoli (Chopped small)

  • 1/2 serving of cherry tomatoes

  • 1/2 serving of shredded cheese (Any Brand)

  • 1/2 serving of Ham (Any Brand), Diced

  • Serve with canned soup

  • And leftover Beef & Pasta & Avocado Salad


Instructions

  • Preheat the oven to 180°c.

  • Dice: onions, broccoli, ham

  • Bake broccoli & onions first 15 mins in a casserole dish. Coat top slightly with cooking oil

  • In a large bowl, whisk together the eggs, milk, salt, and pepper. Set the eggs mixture aside

  • Stir baked brcolli and onions together

  • Add ham.and cherry tomatoes

  • Pour in egg mixture

  • Put casserole dish into oven un cook for 15-20 mins till Frittata is crisy\py at the top and edges

  • Remove it from the oven and let rest for 5 minutes before slicing and serving

  • Serve with canned soup and leftover Beef & Pasta & Avocado Salad
